- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Sauté garlic, onion, bell pepper, and sweet potatoes in a large pan with avocado oil for about 8–9 minutes.
- Transfer the sautéed vegetables to your greased baking dish.
- Cook the turkey sausage in the same pan until browned, then mix it with the vegetables in the baking dish.
- Whisk together the eggs, milk, cheese, salt, pepper, and thyme in a large bowl.
- Pour the egg mixture over the veggie and sausage layer in the baking dish and gently stir.
- Bake uncovered for 40–45 minutes or until the center is firm.
- Let the casserole rest for 10–15 minutes before slicing and serving.
