Ingredients
  

For the Casserole
  • 3 cloves Garlic minced
  • 1 pound Turkey sausage can substitute with chicken or plant-based sausage
  • 2 cups Sweet potatoes cubed
  • 1 medium Green bell pepper diced
  • 1 medium Yellow onion finely diced
  • 2 tablespoons Avocado oil can substitute with olive oil
For the Egg Mixture
  • 6 large Eggs whisked
  • 1 cup Whole milk can substitute with plant-based milk
  • 1 cup Mozzarella cheese freshly grated
  • 1 teaspoon Salt
  • 1 teaspoon Dried thyme
  • ½ teaspoon Black pepper freshly ground

  • 9x13-inch baking dish
  • Large frying pan
  • mixing bowl

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Sauté garlic, onion, bell pepper, and sweet potatoes in a large pan with avocado oil for about 8–9 minutes.
  3. Transfer the sautéed vegetables to your greased baking dish.
  4. Cook the turkey sausage in the same pan until browned, then mix it with the vegetables in the baking dish.
  5. Whisk together the eggs, milk, cheese, salt, pepper, and thyme in a large bowl.
  6. Pour the egg mixture over the veggie and sausage layer in the baking dish and gently stir.
  7. Bake uncovered for 40–45 minutes or until the center is firm.
  8. Let the casserole rest for 10–15 minutes before slicing and serving.
