Taco Pasta Bake

Ingredients
  

For the Pasta
  • 8 oz Pasta (cavatappi or rotini) Cooked al dente
For the Taco Filling
  • 1 lb Ground beef or turkey Use lean meat for a healthier option
  • 1 teaspoon Olive oil For sautéing
  • 1 small Onion Finely diced
  • 2 cloves Garlic Minced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 can Black beans Drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Salsa Choose your preferred heat level
For the Cheese Layer
  • 1 cup Sour cream Room temperature
  • 2 cups Shredded cheese Cheddar or Mexican blend
For Topping
  • 1 cup Tortilla chips Crushed
  • 1 small Green onion Chopped for garnish
  • 1 small Fresh cilantro Chopped for garnish

Method
 

Prepare the Pasta
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the Taco Filling
  1. In a skillet over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a wooden spoon, about 6-8 minutes.
  4. Stir in chili powder, cumin, and paprika. Cook for another minute to toast the spices.
  5. Add black beans, corn, and salsa to the skillet. Stir well to combine and heat through for about 5 minutes.
Combine and Bake
  1. In a large mixing bowl, combine the cooked pasta with the taco filling. Mix well to ensure the pasta is evenly coated.
  2. Spread half of the pasta mixture into the bottom of a greased baking dish. Layer half of the sour cream and half of the shredded cheese on top.
  3. Add the remaining pasta mixture, followed by the rest of the sour cream and cheese.
  4. Sprinkle crushed tortilla chips on top for added crunch.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let it cool for 5 minutes.
  2. Garnish with chopped green onions and cilantro before serving.
  3. Serve warm and enjoy your Taco Pasta Bake!
